We think it's the perfect time for something sweet and healthy (sort of)... like grandma's classic dessert ... Apple Pie. Delicious!
If you like to do things from scratch, grab yourself 8 green apples, peel, chop and add to your pan, cover with water and simmer until tender. Remove the apples, let them cool and then stir in 1/3 cup sugar, lemon juice and 1/2 teaspoon of cinnamon.
Note: For more fruity-ness, add your choice of in-season berries to the filling mixture.
You can make your own Short Crust Pastry or buy it ready to go from the freezer section in your supermarket. Cover the base of your dish with a sheet of pastry, making sure it covers the edge.

Put it Together
Add 2 tablespoons of almond meal and then layer your apples in nice and tight. Pile them up high if you need to.
Cover the top with your remaining pastry sheet, pressing the edges together and trim in excess pastry.
Brush with one beaten egg, sprinkle with sugar. Don't forget to cut a few slits in the top also.
Bake at 190 degrees for 30 minutes.
Eat hot or cold with custard, cream, ice-cream.... mmmmm whatever you like.
Basic Short Crust Pastry
250 g plain flour
125 g unsalted butter
1 egg, chilled
Add flour, butter and pinch of salt to your food processor. Combine until it resembles bread crumbs.
Whisk egg and 1 tablespoon chilled water, then add to food processor while motor is still running. Should start to form large clumps.
Knead gently, wrap in cling wrap and chill in fridge overnight (or 2 hours minimum)
