Does the thought of making your own bread sound arduous? Well, this gluten free beauty is so easy to make and surprisingly delicious - it may literally change your life! A friend made it first and gave me a bite - and I was sold. Fed up paying ridiculous amounts of money for gluten free bread, I was ready to test out this recipe. I must admit initially I was sceptical. It does look like a loaf of bird seed, but you really have to taste it to appreciate how the ingredients work together. It's so protein-rich that I find my usual 10am carb craving is definitely diminished.
cup (135 grams) sunflower seed kernels (not in the shell)
1/2 cup (90 grams) flax seeds
1/2 cup (65 grams) hazelnuts or almonds
1 1/2 cups (145 grams) rolled oats (if making gluten-free, make sure to get certified gluten-free oats)
2 tablespoons chia seeds
4 tablespoons psyllium seed husks (3 tablespoons if using psyllium husk powder)
1 teaspoon fine grain sea salt (add 1/2 teaspoon if using coarse salt)
1 tablespoon maple syrup (for sugar-free diets, use a pinch of stevia)
3 tablespoons melted coconut oil or ghee
1 1/2 cups (350 milliliters) water
Mix all the dry ingredients together. Mix all the wet ingredients together, and the combine the two.
Press into a bread loaf tin (lined with baking paper) and let sit for 2 hours or overnight.
Bake at 175 C for 20 mins.
Remove from loaf tin and back for another 30 - 40 mins. Allow to cool and then slice!
